Now, this recipe isn't like your average sweet potato mash. I created this one using the light and sweet Japanese yams. These yams have a redish/ purple colored skin with a white inside that turns golden when cooked. They are absolutely delicious and spiced up with ginger and garlic just siiiiing.
Now, if you are like me, you absolutely love anything avocado. And I mean anything. (I even have one tattooed on me!)
Guacamole is something I hold near and dear to my heart. When avocado season rolls around, guacamole becomes almost a weekly tradition. It is a great snack and meal accompaniment and perfect if you have too many, or just the right amount of avocados lying around.
